Gazpacho Chilled Vegetable Soup:
1 slice whole grain bakery bread, crust removed and torn into bite size pieces
1/2 red onion, roughly chopped
1 yellow or red pepper, seeds removed, roughly chopped
2 cloves garlic
1 banana pepper, seeds removed, cut in half
1 cucumber peeled cut into fourths
5 large tomatoes (about 1 1/2 pounds)
1-2 Tbsp red wine vinegar
1/2 tsp black pepper
1. Place the bread into a mixing bowl, cover with 1 cup of cold water and soak for 5 minutes. Place the onion, peppers and garlic into the bowl of a food processor and pulse three or four times.
2. Add the cucumbers and tomatoes to food processor and pulse just a few more times.
3. Squeeze excess liquid from the bread and add the wet bread to the soup mixture. Process for 20 seconds. Add vinegar and pepper to taste.
4. Garnish with chopped herbs, diced avocado or grilled corn.
with this you get NO cholesterol, 1g fat, 96 mg sodium, 2g fiber, 18g carbohydrates 3g protein 89 calories
Squash With Tomatoes & Basil:
2 Tbsp olive oil
1 cup diced yellow onion
1 1/2 tbsp minced garlic
1 3/4 lbs zucchini or yellow summer squash, cut in half
4 medium vine-ripened tomatoes, cored and cut into 1/2 inch dice(about 2 1/2 cups)
1/2 cup chopped fresh basil leaves
Salt and ground black pepper
1/2 parmesan cheese
1. Heat oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until it's soft for 6 minutes. Add garlic and cook stirring frequently until it's fragrant for 2 minutes.
2. Add zucchini, cover skillet and cook, stir occasionally until it's crisp-tender about 5 minutes. Add tomatoes and cook, covered, for 2 minutes. Stir in basil and season with salt and pepper. Cover and cook for 1 minute.
3. Add two-thirds of parmesan to the mixture and stir. Sprinkle the remaining cheese on top and serve hot.
with this you get 90 calories, 5g saturated fat, 5mg cholesterol, 4g protein, 8g carbohydrate, 2g fiber, 5g sugar & 90mg sodium
